Delicious CHICKEN BIRYANI

Ingredients:

2 cups Basmati Rice
3/4 kg Chicken Pieces
1/2 cup Milk
1 cup Yogurt (curd)
3 sliced onion
1 tsp Ginger Paste
1/2 tsp Garlic Paste
1 tsp Green Chilli Paste
1/2 cup Tomato Puree
2 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tsp Roasted cumin powder
2 tsp Garam Masala Powder
1/2 tsp Green Cardamom Powder
Saffron a pinch
1 tsp Coriander Powder
2 tbsp Green Coriander Leaves
Salt to taste
7 tbsp Oil

Preparation:

  • Mix tomato puree, yogurt, ginger garlic paste, green chilli paste, red chilli powder, turmeric powder, roasted cumin powder, garam masala, coriander powder and salt. Stir well.
  • Marinate the chicken with this mixture and keep aside for 3-4 hours.
  • Heat oil in a pan. Fry the onions until golden brown.
  • Add the marinated chicken and cook for 10 minutes.
  • Add 4 cups of water to the rice. Mix saffron in milk and add to it.
  • Add cardamom powder. Add the chicken pieces.
  • Pressure cook the rice. Mix gently.
  • Garnish with green coriander leaves and serve hot.

Grilled Chicken Recipe

* Prep: 15 min. + marinating Grill: 1-1/4 hours + standing
* Yield: 6 Servings


Ingredients

* 3 tablespoons minced fresh thyme or 1 tablespoon dried thyme
* 1 tablespoon grated lemon peel
* 1 tablespoon ground cumin
* 1 teaspoon salt
* 1 teaspoon ground allspice
* 1 teaspoon chili powder
* 1 teaspoon pepper
* 1/2 teaspoon ground nutmeg
* 1 broiler/fryer chicken (3 to 4 pounds)
* 1 tablespoon olive oil
* 1 can (12 ounces) beer or nonalcoholic beer

Directions

* Combine the first eight ingredients. Gently loosen skin from chicken breasts; rub olive oil and 2 tablespoons spice mixture under the skin. Rub remaining spice mixture over skin. Place chicken in a large resealable plastic bag; seal bag. Refrigerate for at least 1 hour or overnight.
* Prepare grill for indirect heat, using a drip pan. Pour out a third of the beer. Carefully poke additional holes in top of the can with a can opener. Holding the chicken with legs pointed down, lower chicken over the can so it fills the body cavity.
* Place chicken over drip pan; grill, covered, over indirect medium heat for 1-1/4 to 1-1/2 hours or until a meat thermometer reads 180°. Remove chicken from grill; cover and let stand for 10 minutes. Remove chicken from can. Yield: 6 servings.

Carrot Cake with Lime Mascarpone Icing

Ingredients

• 250g unsalted butter, softened
• 250g light brown soft sugar
• 5 large eggs, preferably free-range or organic, separated
• zest and juice of 1 orange
• 170g self-raising flour, sifted
• 1 slightly heaped teaspoon baking powder
• 100g ground almonds
• 100g shelled walnuts, chopped, plus a handful for serving
• 1 heaped teaspoon ground cinnamon
• a pinch of ground cloves
• a pinch of ground nutmeg
• ½ teaspoon ground ginger
• 250g carrots, peeled and coarsely grated
sea salt

for the lime mascarpone icing:
• 100g mascarpone cheese
• 200g full-fat cream cheese
• 85g icing sugar, sifted
• zest and juice of 2 limes 

Method

This carrot cake is an exceedingly good cake made all the more pleasing by the twist of lime mascarpone icing. It’s delicious, it works and it’s better than any other carrot cake I’ve tried. I would normally bake this in a square or round cake tin, but for the picture I used a lovely old loaf tin and it came out looking gorgeous.


Preheat the oven to 180ºC/350ºF/gas 4. Grease and line a 22cm-square cake tin or a round equivalent with greaseproof paper. Beat the butter and sugar together by hand or in a food processor until pale and fluffy. Beat in the egg yolks one by one, and add the orange zest and juice. Stir in the sifted flour and baking powder, and add the ground almonds, walnuts, spices and grated carrot and mix together well.

In a separate bowl, whisk the egg whites with a pinch of salt until stiff, then gently fold them into the cake mix. Scoop the mixture into the prepared cake tin and cook in the preheated oven for about 50 minutes until golden and risen. You can check to see if the cake is cooked by poking a cocktail stick into it. Remove it after 5 seconds and if it comes out clean the cake is cooked; if slightly sticky, it needs a bit longer, so put it back in the oven. Leave the cake to cool in the tin for 10 minutes, then turn it out on to a rack and rest for at least an hour.

Mix all the icing ingredients together and spread generously over the top of the cake. Finish off with a sprinkling of chopped walnuts.

1-Minute Berry Ice Cream

Ingredients

• 1 x 500g pack of mixed frozen berries
• 150g fresh blueberries
• 3–4 tablespoons runny honey
• 1 x 500g tub of natural yoghurt
• a few sprigs of fresh mint
• optional: 4 small ice cream cornets

Method

In advance: Put 4 small glasses in the freezer, or you can serve straight into ice cream cornets, if you prefer.

When you're all set up and ready to go, get the glasses (if using) and the frozen berries out of the freezer. Divide the fresh blueberries between the glasses or cornets. Put the honey and yoghurt and leaves from the sprigs of mint into the food processor and whiz, then add the frozen berries and whiz again until combined. Spoon the frozen yoghurt over the fresh berries and serve. Yum.
